Soup is the ultimate comfort food for winter, and it just so happens that January is soup month! So grab your blanket, a bowl and let's wait these wintery months out with our favourite soup recipes.
1. Minestrone Soup
Jamie Oliver knows best! His classic Minestrone soup is a tasty crowd pleaser according to the main man himself. Serving up to 8 people, this soup takes about 1 hour 20 minutes to make and includes a whole lot of veg to keep you feeling revitalised after a hectic December.
Ingredients
- 1 Garlic Clove
- 1 Red Onion
- 2 Carrots
- Sticks of Celery
- 1 Courgette
- 1 Leek
- 1 Potato
- 400g tin of Cannellini Beans (Or a tin of mixed beans will work just as well)
- 2 Rashers of Bacon
- Oregano
- 1 Bay Leaf (Optional)
- 2x 400g Tins of Plum Tomatoes
- Vegetable Stock
- Seasonal Greens
- 100g Wholemeal Pasta
- Parmesan Cheese

2. Spiced Vegetable Soup with Lentils and Roasted Chilli
Heat up your palette with this winter warmer. This spicy Indian soup is the perfect comfort food, with a whole wealth of ingredients to keep you feeling warm and satisfied when the weather is at its coldest. This soup takes about 30 minutes to prepare and 50 minutes to cook, but the effort is oh-so worth it!
Ingredients
- 3 Red Chillies
- Olive Oil
- 2 Onions
- 2 Bay Leaves
- Cumin Seeds
- Garam Masala
- 3 Carrots
- 2 Sticks of Celery
- 2 Garlic Cloves
- 300g Dried Green or Brown Lentils
- Vegetable Stock
- 100g Broccoli Florets
- 2 Handfuls of Spinach Leaves
- 1/2 Lemon
- Greek Yogurt (Optional)
3. Carrot and ginger Immune-Boosting Soup
Cold weather bringing you AND your immune system down? We feel you, so here is our very favourite carrot and ginger immune-boosting soup. Ginger in a soup you say? That's right, who doesn't love a kick to their carrot soup? If your immune system is really getting the better of you, you'll be pleased to know this soup only takes about 10 minutes to make, so back to bed you go.
Ingredients
- 3 Carrots
- 1 tbsp Grated Ginger
- Turmeric
- Cayenne Pepper
- Wholemeal Bread
- 200ml Vegetable Stock
- 1 tbsp Soured Cream

4. Spinach and Tortellini Soup
As a student, we know you don't have a lot of time on your hands, so this next recipe is super easy, cheap and only takes 15 minutes to make. It will leave you feeling full and ready for your next lecture for sure.
Ingredients
- Chicken or Vegetable Stock
- 2 Bay Leaves
- 200g Tortellini
- 50g Frozen Peas
- 1 Large Handful of Spinach

5. Smoked Sausage, Kale and Potato Soup
If you're looking for something a bit meatier when it comes to soup, this smoked sausage, kale and potato soup is the perfect comfort food with a bit of extra substance, plus it takes just over half an hour to prepare and cook (bonus).
Ingredients
- 1 tbsp Butter
- Olive Oil
- 1 Onion
- 3 Garlic Cloves
- Smoked Sausage (I'd recommend Mattersons)
- Large Handful of Kale
- Salt and Pepper
- Rosemary
- Dried Thyme
- 1 Large Potato (Cubed)
- Chicken Stock
- 2 Cups of Milk
