6 perfect vegan recipes for World Vegan Month

November marks World Vegan Month! To celebrate this and all the tasty vegan foods out there we thought we'd put together some inspo for you. Whether you’re vegan or want to try a few vegan meals every now and again, these are all vegan alternatives to classic dishes and desserts that we already love!

Vegan brownies

Did you know that Oreos are vegan? These Oreo brownies are the absolute dream if you're a transitioning vegan and love baking or eating baked goods. Squidgy, fudgy, delicious and stuffed with Oreos, dreamy.

Ingredients:

• 125g flour

• 200g sugar

• 40g cocoa powder

• 1/2 tsp baking powder

• 120ml plant-based milk (almond, soy, or oat)

• 60ml vegetable oil or melted coconut oil

• 1 tsp vanilla extract

• Optional: 75g dark chocolate chips or chopped nuts

Instructions:

1. Preheat your oven to 180°C and grease an 8x8 inch baking pan

2. In a mixing bowl, combine flour, sugar, cocoa powder, and baking powder

3. Add in the plant-based milk, oil, and vanilla extract, stirring until smooth

4. Fold in chocolate chips or nuts if desired

5. Pour the batter into the pan, spread evenly, and bake for 20–25 minutes

6. Let cool before cutting into squares

Mango and tofu curry

Curries are the ultimate comfort food for cold evenings and this mango and tofu curry means that you can get all the feels of a warming curry and rice without the meats! Grab your friends, settle down in front of a series binge and tuck into this tasty curry!

Ingredients:

• 1 block (200g) firm tofu, pressed and cubed

• 1 ripe mango, peeled and cubed

• 400ml can of coconut milk

• 1 onion, diced

• 2 garlic cloves, minced

• 15g (1 tbsp) curry powder

• 15ml (1 tbsp) olive or coconut oil

• Salt and pepper to taste

Instructions:

1. Heat oil in a pan over medium heat. Sauté the onion and garlic until soft

2. Add the tofu and cook until golden on all sides

3. Sprinkle in the curry powder and mix until the tofu is coated

4. Pour in the coconut milk and add the mango cubes. Simmer for 10 minutes until the sauce thickens slightly

5. Season with salt and pepper and serve with rice

Cauliflower wings

Not chicken - cauliflower! These sticky, spicy and sesame cauliflower wings are a fantastic alternative to chicken wings. These cauli wings have all the buffalo taste of amazing chicken wings with lower fat and still some awesome protein.

Ingredients:

• 1 small head of cauliflower, cut into bite-sized florets

• 125g of any flour

• 250ml plant-based milk

• 100g breadcrumbs

• 125ml shop-bought buffalo or BBQ sauce

Instructions:

1. Preheat your oven to 220°C and line a baking sheet with parchment paper

2. In a bowl, mix the flour and plant-based milk to create a batter

3. Dip each cauliflower floret into the batter, then coat with breadcrumbs

4. Place florets on the baking sheet and bake for 20 minutes

5. Remove from the oven, brush with buffalo or BBQ sauce, and bake for another 10–15 minutes until crispy

6. Serve with vegan ranch or mayo

A vegan roast

If I went vegan then one of the things I would definitely miss would be Sunday dinner. But, this doesn't have to change! Make some swaps and still enjoy your fave dinner.

Ingredients:

• 1 large sweet potato or 2 small potatoes, chopped

• 2 carrots, chopped (around 150g)

• 100g Brussels sprouts, halved

• 100g butternut squash, cubed

• 200g canned chickpeas, drained

• 30ml (2 tbsp) olive oil

• 15ml (1 tbsp) maple syrup

• 1 tsp rosemary

• Salt and pepper to taste

• Optional: vegan gravy

Instructions:

1. Preheat your oven to 200°C. Line a baking tray with parchment paper

2. Place all the chopped vegetables and chickpeas on the tray

3. Drizzle with olive oil, maple syrup, rosemary, salt, and pepper, then toss to coat evenly

4. Roast for 25–30 minutes, stirring halfway, until veggies are golden and crispy

5. Serve with a side of vegan gravy for a cosy, comforting dinner

Vegan fajitas

Luckily, Mexican lends itself quite nicely to vegan food as there are a lot of vegetables as bases for our fave Tex-Mex treats.

Ingredients:

• 1 red and yellow pepper, sliced

• 1 onion, sliced

• 200g mushrooms, sliced

• 1 tsp smoked paprika

• 1 tsp cumin

• Salt and pepper to taste

• 15ml (1 tbsp) olive oil

• Tortillas

• Optional toppings: guacamole, salsa, vegan sour cream

Instructions:

1. Heat olive oil in a pan over medium heat

2. Add the onions and cook until softened, then add bell peppers, mushrooms, smoked paprika, and cumin

3. Stir-fry for 5–7 minutes until veggies are soft and slightly caramelised

4. Season with salt and pepper, and serve the veggie mix in tortillas with your favorite toppings

Vegan pancakes

Brunch and breakfast foods can be so easily vegan! This is such a fun fact of life and these pancakes are seriously fluffy and delicious. Melt some berries down in a pan to make a delicious fruit syrup to pour on top—yum!

Ingredients:

• 125g flour

• 15g sugar

• 1/2 tsp baking powder

• 250ml plant-based milk

• 15ml (1 tbsp) vegetable oil

• 1 tsp vanilla extract

• Pinch of salt

Instructions:

1. In a bowl, whisk together flour, sugar, baking powder, and salt

2. Pour in plant-based milk, oil, and vanilla extract, stirring until smooth

3. Heat a non-stick skillet over medium heat and pour in a small amount of batter

4. Cook for 2–3 minutes, flip, and cook the other side until golden 5. Serve with syrup, fruit, or plant-based yogurt
